Buttermilk Waffles

Dairy Free Waffles

Made 10 mini waffles

Recipe

            1 cup of flour

            1 tbs of sugar

            1 tsp baking powder

            1/2 tsp baking soda

            Dash of salt

Dash of cinnamon (optional to taste)

            1 egg

            1tsp vanilla

            1 cup buttermilk (Almond-milk with apple cider vinegar)

If using the non-dairy option add 1 and ½ tbs of apple cider vinegar to 1 cup of non- dairy milk (I use almond-milk) and let sit 10 minutes

            1/4 cup butter melted

            Chocolate chips (optional)

Steps

            Whisk together dry ingredients

            In a separate bowl mix wet ingredients 

Mix the dry ingredients into the wet ingredient bowl and whisk together until they are incorporated but do not over stir

Stir in chocolate chips, blueberries, or anything else you want to add

You can use oil to help make the waffles crispier but if your waffle iron is non-stick you don’t need to add oil

Add the batter to the warmed up waffle iron but do not pour all the way to the sides or it will flow over

Cook longer for more crispiness 

I saw a good tip on Martha Stewarts website to preheat your oven to about 275 degrees and to stick the cooked waffles in the oven until fully ready to serve to preserve the warmth and crispiness. This also works if your waffle iron doesnt get your waffles quite as crispy as you want!
